Honey BBQ Garlic Chicken

Serves 4

Ingredients

  • 1/2 cup apple cider vinegar

  • 1/2 cup honey

  • 1/2 cup BBQ sauce

  • 1/2 cup ketchup

  • 4 tablespoons butter, unsalted

  • 2 teaspoons garlic salt

  • 2 garlic cloves. minced

  • 8 boneless. skinless chicken thighs

  • 1 tablespoon vegetable oil

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 2 cups cubed pineapple

  • 2 red bell peppers

  • 1 tablespoon fresh parsley, for garnish

  • 1 tablespoon sesame seeds

Directions

  1. Preheat oven to 400ºF

  2. In a bowl, whisk together the vinegar, honey, ketchup, melted butter, garlic salt and minced garlic.

  3. Drizzle the thighs in oil and sprinkle with salt and pepper. Spread on a baking sheet. Bake for 15 minutes.

  4. Remove from the oven, and make room for the pineapple and bell pepper. Baste the chicken thighs with 1/2 cup of the sauce. Return to the oven for 10 minutes.

  5. Turn your broiler on and broil the chicken for 8-10 minutes until it is charred.

  6. Remove from the oven, and toss the chicken, peppers, and pineapple in 1/2 cup of the remaining sauce.

  7. Serve over rice, and top with the parsley and sesame seeds.
