Honey BBQ Garlic Chicken
Serves 4
Ingredients
1/2 cup apple cider vinegar
1/2 cup honey
1/2 cup BBQ sauce
1/2 cup ketchup
4 tablespoons butter, unsalted
2 teaspoons garlic salt
2 garlic cloves. minced
8 boneless. skinless chicken thighs
1 tablespoon vegetable oil
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 cups cubed pineapple
2 red bell peppers
1 tablespoon fresh parsley, for garnish
1 tablespoon sesame seeds
Directions
Preheat oven to 400ºF
In a bowl, whisk together the vinegar, honey, ketchup, melted butter, garlic salt and minced garlic.
Drizzle the thighs in oil and sprinkle with salt and pepper. Spread on a baking sheet. Bake for 15 minutes.
Remove from the oven, and make room for the pineapple and bell pepper. Baste the chicken thighs with 1/2 cup of the sauce. Return to the oven for 10 minutes.
Turn your broiler on and broil the chicken for 8-10 minutes until it is charred.
Remove from the oven, and toss the chicken, peppers, and pineapple in 1/2 cup of the remaining sauce.
Serve over rice, and top with the parsley and sesame seeds.
