Prosciutto & Salami Salad with Nectarines
Serves 6
Ingredients
3 Ripe Nectarines, Sliced
6 Thin Slices Prosciutto
12 Thin Slices Salami
1 Small Bunch of Fresh Basil
Mint Leaves, (a few sprigs)
Handful of Arugula
2 Tablespoons Lemon Juice
1/4 Cup Extra Virgin Olive Oil
Salt & Pepper, to taste
Directions
Arrange the prosciutto and salami on your serving platter.
In a bowl, add the sliced nectarines, herbs, and arugula.
Whisk together the lemon juice and oil, in a small bowl. Season with salt and pepper, to taste.
Pour the vinaigrette with the arugula, herbs, and nectarines. Toss to coat.
Spoon the nectarines and salad over the prosciutto and salami.
Serve Immediately.
